Ingredients

  • 6 egg yolks
  • 1 1/2 cups sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cold water
  • 2 teaspoons vanilla
  • 1 teaspoon lemon extract
  • 1 teaspoon grated lemon peel
  • 6 egg whites
  • 1/2 teaspoon cream of tartar

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a small bowl, beat egg yolks until very thick.
  3. Pour yolks into a large mixer bowl.
  4. Gradually beat in sugar.
  5. On low speed, mix in flour, baking powder, and salt alternately with water, vanilla, lemon extract, and lemon peel.
  6. In another bowl, beat egg whites and cream of tartar until stiff.
  7. Gently fold the egg yolk mixture into the beaten egg whites.
  8. Pour the batter into a greased tube pan.
  9. Bake for 60 to 65 minutes.
  10. Invert the pan onto a funnel and let hang until the cake is completely cool.
