Ingredients

  • 1 1/2 cups unsifted all-purpose flour
  • 1/2 cup melted margarine
  • 2 2/3 cups coconut
  • 1 cup chopped pecans
  • 1 package (8 oz.) cream cheese
  • 3 cups cold milk
  • 1 package instant vanilla jello pudding

Instructions

  1. Combine flour, chopped pecans, and melted margarine; mix well.
  2. Press evenly into the bottom of a 13 x 9-inch pan.
  3. Bake at 350°F until lightly brown. Cool.
  4. Beat the cream cheese until very soft.
  5. Gradually add 1/2 cup of cold milk, and blend for 2 minutes.
  6. Add the remaining milk and the instant vanilla pudding; blend for 2 minutes.
  7. Stir in the remaining coconut and chopped pecans.
  8. Pour the pudding mixture over the baked crust.
  9. Spread Cool Whip evenly over the pudding.
  10. Sprinkle with additional coconut and chopped pecans.
  11. Chill for at least 2 hours before serving.
