A rich, creamy coconut pie with a tender crust, sweet coconut flavor, and topped with fluffy meringue or whipped cream, perfect for dessert gatherings or special occasions.

Ingredients

  • 1 can evaporated milk
  • 1 cup sugar
  • 4 tablespoons heaping flour
  • 3 egg yolks
  • 1/2 cup coconut
  • 1 (8 or 9-inch) regular pie crust

Instructions

  1. Bake your favorite pie crust or use a frozen pie crust.
  2. Over medium heat on the stove, combine all ingredients and stir constantly until the mixture coats the spoon.
  3. Allow the mixture to cool slightly; it will thicken as it cools in the pie crust.
  4. Pour the filling into the baked pie crust.
  5. Top with meringue or Cool Whip.
  6. Proceed with meringue recipe if making from scratch.
