Ingredients

  • 1/4 cup margarine
  • 1/4 cup sugar
  • 1 1/4 cups flour
  • 1 cup drained crushed pineapple
  • 1/2 cup sugar
  • 1 egg

Instructions

  1. Mix 1/2 cup margarine and 1/4 cup sugar with a fork until well combined.
  2. Add 1 1/4 cups flour and mix well until crumbs form.
  3. Use your hands to knead the mixture into a soft dough.
  4. Press the dough evenly into the bottom of a 9 x 9 x 2-inch pan, with a 1/2-inch edge up the sides.
  5. Prick the crust with a fork.
  6. Bake for 15 minutes in a 350°F oven. Remove from oven.
  7. Spread the drained crushed pineapple evenly over the crust.
  8. Add 1/2 cup sugar to the beaten egg and mix well.
  9. Fold the sugar-egg mixture into the melted margarine.
  10. Pour the filling over the pineapple layer.
  11. Bake for an additional 20 minutes in the 350°F oven.
  12. Cool completely and cut into squares.
