Cod And Mandarin Orange Curry

Ingredients

  • 1/4 lb long-grain rice (about 1/2 cup)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp curry powder
  • 2 cups 2% or whole milk
  • 1 lb cod fillet, cut into bite-sized cubes
  • 1/4 lb frozen peas (about 2/3 cup)
  • 1-11 oz can mandarin orange segments, drained
  • 3 sprigs fresh flat-leaf parsley, chopped
  • 1/3 cup peanuts

Instructions

  1. Bring 3/4 cup salted water to a boil, add the rice and cook for 20 mins.
  2. Melt the butter in a saucepan, add the flour and cook over low heat, stirring, for 5 mins. Stir in the curry powder, then gradually pour in the milk, stirring constantly. Simmer over low heat for 15 mins, stirring occasionally. Season with salt and black pepper. Add the cod and peas and simmer for 5 mins. Add the mandarin oranges and simmer for 1 min more.
  3. Drain the rice and arrange on plates with the curry. Sprinkle with the parsley and peanuts.
