Ingredients

  • 1 large onion, chopped
  • 1 large green pepper, cut in strips
  • 1 large clove garlic, minced
  • 2 Tbsp. oil
  • 1 can (16 oz.) tomatoes, cut up
  • 1 small bay leaf, crumbled
  • 1/2 tsp. each thyme and salt
  • 1/4 tsp. pepper
  • 1 lb. frozen cod or other fish fillet

Instructions

  1. In large skillet over medium heat, saute onion, green pepper and garlic in oil about 5 minutes or until tender.
  2. Stir in tomatoes, bay leaf, thyme, salt and pepper.
  3. Cover and simmer 15 minutes.
  4. Meanwhile, let fish stand at room temperature to thaw slightly, then cut in 1 inch cubes.
  5. Add to sauce.
  6. Cover and simmer 10 to 15 minutes or until fish flakes easily with fork.
