Cod Stew
Ingredients
- 6 (6 oz.) frozen cod or scrob fillets ⓘ
- 5 Tbsp. margarine ⓘ
- 1 1/2 c. sliced carrots (rounds) ⓘ
- 2 1/4 c. potatoes, sliced ⓘ
- 1 1/2 c. onions, largely diced ⓘ
- 3/4 c. celery, sliced ⓘ
- 3/4 c. green pepper, chopped ⓘ
- 2 tsp. salt or to taste ⓘ
- 1 1/2 tsp. oregano
- 1/2 tsp. pepper ⓘ
- 3 Tbsp. white wine (optional) ⓘ
- 2 1/2 c. water ⓘ
Instructions
- Partially thaw fish fillets.
- Cut into large chunks.
- Saute carrots and potatoes in margarine approximately 5 minutes in heavy pot.
- Add remaining vegetables and seasonings. Simmer 3 minutes longer.
- Add wine, water and fish.
- Ladle into 6 ovenproof bowls and bake in preheated 400° oven for 5 to 8 minutes.
- Yields 6 servings.
