Cod With Mediterranean Salsa
Ingredients
- Salsa
- 1/3 cup kalamata olive, pitted and diced ⓘ
- 1 plum tomato, peeled, seeded, and diced ⓘ
- 1 shallot, minced ⓘ
- 1 tablespoon fresh basil, minced ⓘ
- 1 tablespoon capers
- 1/4 teaspoon grated orange zest ⓘ
- 1 teaspoon fresh lemon juice ⓘ
- 1 teaspoon olive oil ⓘ
- salt ⓘ
- pepper ⓘ
- Cod ⓘ
- 1 lb cod fish fillet ⓘ
- lemon pepper
- salt ⓘ
Instructions
- Mix all salsa ingredients together and adjust salt and pepper to taste.
- Pat fish dry and season with salt and lemon pepper.
- Spray a non-stick skillet with cooking spray and heat over medium high heat.
- Add olive oil to pan and heat until hot.
- Cook fillets 4 minutes on each side or until done. Do not overcook.
- Serve with salsa spooned over top.
