Ingredients

  • 6 large potatoes, peeled and cubed
  • 1 tsp salt
  • 1 large onion, chopped
  • 1/4 cup butter or margarine
  • 2 (14 3/4 oz.) cans cream-style corn
  • 4 bacon strips, cooked and crumbled
  • 3 cups milk
  • 8 oz. Colby cheese, cubed

Instructions

  1. Place potatoes in a Dutch oven, sprinkle with salt, and cover with water. Bring to a boil, then reduce heat, cover, and simmer until potatoes are tender.
  2. Meanwhile, in a skillet, sauté onion in butter until tender.
  3. Stir in canned cream-style corn and crumbled bacon; heat through.
  4. Drain the cooked potatoes and add them to the mixture.
  5. Pour in milk and heat through.
  6. Stir in the corn mixture and cubed Colby cheese until cheese is melted and chowder is heated through.
  7. Serve immediately.
