Colcannon Potatoes

- Pare potatoes and cut each into quarters.
- In a medium saucepan, bring 1/2 inch boiling water with 1 teaspoon salt to a boil.
- Add potatoes to the boiling water, cover, and cook for 15 to 20 minutes, or until fork-tender and completely cooked.
- Drain the potatoes.
- Return the pan to low heat and shake to dry the potatoes.
- In a large bowl, mash the potatoes.
- Add coarsely shredded green cabbage, sliced scallions, milk, margarine, and pepper.
- Mix well until all ingredients are combined and creamy.
