Colcannon Potatoes

Creamy, hearty Irish-inspired mashed potatoes mixed with tender cabbage and scallions, perfect for comforting family dinners or festive occasions.

Ingredients

  • 2 lb. potatoes
  • boiling water
  • 3 tsp. salt
  • 4 c. coarsely shredded green cabbage
  • 3/4 c. sliced scallions
  • 1/3 c. milk
  • 1/2 c. margarine
  • 1/4 tsp. pepper

Instructions

  1. Pare potatoes and cut each into quarters.
  2. In a medium saucepan, bring 1/2 inch boiling water with 1 teaspoon salt to a boil.
  3. Add potatoes to the boiling water, cover, and cook for 15 to 20 minutes, or until fork-tender and completely cooked.
  4. Drain the potatoes.
  5. Return the pan to low heat and shake to dry the potatoes.
  6. In a large bowl, mash the potatoes.
  7. Add coarsely shredded green cabbage, sliced scallions, milk, margarine, and pepper.
  8. Mix well until all ingredients are combined and creamy.
