Ingredients

  • 1 pkg. fried Rice-A-Roni
  • 1 jar marinated artichoke hearts
  • 1 small can chopped ripe olives
  • 1 can sliced water chestnuts, drained
  • 1 diced bell pepper
  • 1/2 cup diced celery
  • 1/4 cup diced onions

Instructions

  1. Prepare rice by package directions and let it cool.
  2. Add remaining ingredients, cutting up artichoke hearts and adding oil from the jar.
  3. Add mayonnaise, salt, and pepper to taste.
  4. Refrigerate for at least 2 hours before serving.
  5. Better if served the next day.
