Cold Stuffed Tomatoes

Chilled stuffed tomatoes filled with a creamy pea, celery, bacon, and cashew mixture offer a refreshing appetizer with savory and crunchy flavors, perfect for summer gatherings.

Ingredients

  • 6 medium firm ripe tomatoes
  • 1/4 tsp salt
  • 1 (10 oz) pkg frozen green peas, thawed
  • 1 c sour cream
  • 1/4 c chopped green onion
  • 1 c celery or water chestnuts
  • dash black pepper
  • 1/2 tsp dill weed
  • 6 slices bacon, cooked and crumbled
  • 1/2 c cashews

Instructions

  1. Cut stem ends off the tomatoes.
  2. Discard seeds and scoop out pulp.
  3. Sprinkle inside of tomatoes with salt and turn upside down on paper towels to drain for about 10 minutes.
  4. Chop the pulp and press out as much liquid as possible.
  5. Combine the chopped pulp, drained peas, sour cream, chopped green onion, chopped celery or water chestnuts, black pepper, dill weed, crumbled bacon, and cashews in a bowl.
  6. Dry the insides of the tomatoes and stuff them with the mixture.
  7. Chill until serving time.
