Ingredients

  • 1 bundle collards
  • 2-3 Tbsp chopped pickles or relish
  • 8-10 saltine crackers, crumbled
  • mayonnaise (enough to make mixture soft)
  • 1 to 1.5 cups chopped ham

Instructions

  1. Boil collards until very tender, then salt to taste.
  2. Chop the cooked collards in a chopper or finely by hand.
  3. Mix chopped collards with chopped pickles or relish, crumbled saltine crackers, mayonnaise, and chopped ham until well combined.
  4. Add pepper sauce for flavor, if desired.
  5. Serve with additional crackers or use as a filling for sandwiches.
