Company Coffee Bars
Delicious layered coffee-flavored dessert bars combining crunchy vanilla wafers, chocolate, pecans, and coffee ice cream, perfect for parties or a satisfying sweet treat. Keeps well frozen.

- Sprinkle 1 3/4 cups of crushed vanilla wafers in the bottom of a 13 x 9-inch baking pan.
- Melt chocolate chips and oleo in a saucepan over low heat.
- Stir in powdered sugar, then beat egg yolks and stir into the chocolate mixture.
- Beat egg whites until stiff and fold into the chocolate mixture.
- Pour the chocolate mixture over the crushed wafers in the pan.
- Top with 1/2 cup of pecans.
- Freeze until solid.
- Soften the coffee ice cream and spread over the chocolate layer.
- Sprinkle with 3/4 cup of crushed vanilla wafers on top.
- Cover with foil and freeze until firm.
- Serve frozen, yields 16 to 20 servings, keeps well frozen for 3 months.
