  • 2 1/2 cups crushed vanilla wafers
  • 3 oz chocolate chips
  • 1/4 lb oleo
  • 2 cups powdered sugar

  • 1 cup pecans
  • 1/2 gallon coffee ice cream

  1. Sprinkle 1 3/4 cups of crushed vanilla wafers in the bottom of a 13 x 9-inch baking pan.
  2. Melt chocolate chips and oleo in a saucepan over low heat.
  3. Stir in powdered sugar, then beat egg yolks and stir into the chocolate mixture.
  4. Beat egg whites until stiff and fold into the chocolate mixture.
  5. Pour the chocolate mixture over the crushed wafers in the pan.
  6. Top with 1/2 cup of pecans.
  7. Freeze until solid.
  8. Soften the coffee ice cream and spread over the chocolate layer.
  9. Sprinkle with 3/4 cup of crushed vanilla wafers on top.
  10. Cover with foil and freeze until firm.
  11. Serve frozen, yields 16 to 20 servings, keeps well frozen for 3 months.
