Ingredients

  • 10 potatoes
  • salt and pepper
  • 16 oz. cream cheese
  • 2 eggs
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. minced fresh parsley
  • 2 Tbsp. minced chives and/or 1 small onion, grated
  • 3.5 oz. can French fried onions

Instructions

  1. Drain the boiled potatoes and beat until smooth.
  2. Add salt and pepper, then the softened cream cheese, and beat again until well combined.
  3. Mix in the grated onion or chives, beaten eggs, flour, and minced parsley.
  4. Transfer the mixture into a buttered casserole dish.
  5. Spread crushed French fried onions over the top.
  6. Bake at 325°F (163°C) for 30 minutes until golden and heated through.
