Colorful and cheesy, these confetti biscuits combine bell peppers, pimentos, and sharp cheddar for a vibrant, savory treat perfect for brunch or casual gatherings.

Ingredients

  • 1 1/2 cups self-rising flour
  • 1/3 cup milk
  • 1/3 cup diced bell pepper
  • 1 cup shredded Cheddar cheese
  • 1/3 cup diced pimentos

Instructions

  1. Set aside 1/2 cup of shredded Cheddar cheese.
  2. Mix the remaining ingredients, including the self-rising flour, milk, diced bell pepper, diced pimentos, and most of the cheese.
  3. The mixture should be stiff enough to drop from a spoon onto a baking sheet.
  4. Drop spoonfuls of the batter onto a baking sheet, top with the remaining cheese.
  5. Bake for about 20 minutes or until the biscuits are done.
