- Into a large bowl of an electric mixer, sift together flour, sugar, baking soda, salt, and spices.
- Add diced apples, shortening, chopped walnuts, and lightly beaten eggs to the dry ingredients.
- Beat until well mixed.
- Turn the batter into a greased and floured round spring-form pan or divide into two 9-inch layer cake pans.
- Bake in a preheated 325°F oven for 45 minutes or until the cake tests done.
- Allow to cool, then remove from pans.
- Frost with caramel frosting, if desired.
