Ingredients

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons Equal
  • 2 (8 oz) packages reduced-fat cream cheese softened
  • 2/3 cup Equal
  • 1 egg
  • 2 egg whites
  • 1/2 teaspoon grated lime peel
  • 3 tablespoons fresh lime juice

Instructions

  1. Combine graham cracker crumbs, melted butter, and 2 tablespoons of Equal in the bottom of an 8-inch spring-form pan or round cake pan.
  2. Pat the mixture evenly on the bottom and 1/2 inch up the sides of the pan.
  3. Bake in a preheated 325°F oven for 8 minutes.
  4. In a mixing bowl, beat the softened reduced-fat cream cheese until smooth.
  5. Add 2/3 cup of Equal, grated lime peel, and fresh lime juice; mix well.
  6. Add the egg and egg whites; beat until well combined.
  7. Pour the filling over the prepared crust in the pan.
  8. Bake at 325°F for about 25-30 minutes or until set.
  9. Allow to cool completely, then refrigerate before serving.
