- Remove the stems from the mushrooms and set the caps aside.
- Brush the mushroom caps with olive oil.
- Chop 2 to 3 of the mushroom stems.
- Saute garlic, onion, olive oil, and chopped mushroom stems until fragrant.
- Add ground sausage to the garlic/onion mixture and cook until thoroughly cooked.
- Mix the sausage mixture with fat-free sour cream and shredded Mozzarella cheese.
- Stuff the mushroom caps with the sausage mixture.
- Top with crumbled croutons and additional cheese if desired.
- Bake in a preheated oven at 375°F (190°C) for about 20 minutes until golden and bubbly.
