Ingredients

  • 8 oz. fat-free cream cheese, softened
  • 12 oz. lite Cool Whip
  • 1/4 cup lemon juice
  • 1/4 cup sugar
  • graham cracker pie shell
  • 2 cups milk
  • 1/2 cup biscuit mix
  • 4 eggs
  • 1 cup coconut
  • 3/4 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9 or 10-inch pie pan; 10-inch is preferred.
  3. Put all ingredients into a blender; cover and blend on high speed for about one minute.
  4. Pour the mixture into the prepared pie pan.
  5. Bake at 350°F (175°C) for 50 to 55 minutes or until the center is firm.
  6. Allow to cool before serving.
