Ingredients

  • 2 medium cucumbers
  • 1/2 medium onion
  • 1 (17 oz.) can whole kernel corn
  • 1/2 cup white distilled vinegar
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1 teaspoon dill weed
  • 1/4 teaspoon pepper
  • dash of cayenne pepper
  • parsley sprigs

Instructions

  1. Peel and thinly slice cucumbers and onion.
  2. Drain the corn, reserving the liquid for other uses.
  3. Combine the vinegar, sugar, water, dill weed, pepper, and cayenne pepper in a bowl to make the dressing.
  4. Pour the dressing over the sliced cucumbers, onion, and drained corn in a salad bowl.
  5. Chill the salad to allow flavors to meld.
  6. Toss the salad before serving and garnish with parsley sprigs.
