Ingredients

  • 4 slices bacon
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups white cornmeal
  • 2 cups buttermilk

Instructions

  1. Cook bacon until crisp; drain, reserving 3 tablespoons of drippings.
  2. Crumble bacon finely and set aside.
  3. Stir together flour, sugar, baking soda, and salt.
  4. Add cornmeal to the dry ingredients, then stir in buttermilk, reserved bacon drippings, and crumbled bacon.
  5. Mix well and pour into a well-greased 1 1/2 quart casserole.
  6. Bake at 350°F until the top is golden brown.
  7. Cool the loaf; invert onto a plate.
  8. Cut into thin slices and serve.
