A hearty traditional Navy Beans dish infused with aromatic spices, smoked meats, and a splash of Jamaican rum, perfect for comforting family meals or gatherings.

Ingredients

  • 2 lb dried navy beans
  • 10 whole cloves
  • 1 onion
  • 1 bay leaf
  • 1 Tbsp salt
  • 1 lb lean salt pork
  • 1 lb smoked ham or ham hocks
  • 3 onions chopped
  • 3 cloves garlic crushed
  • 1 Tbsp dry mustard
  • 1/2 c Jamaican rum

Instructions

  1. Cover beans with water and soak overnight.
  2. Drain the beans and put them in a large pot with fresh water to a depth of 3 inches above the beans.
  3. Stick cloves into the peeled onion and add it to the bean pot along with the bay leaf and salt.
  4. Bring to a boil and boil rapidly for 5 minutes while skimming foam from the top.
  5. Reduce heat and simmer until beans are tender but not mushy.
  6. Drain the beans and reserve the liquid.
