Ingredients

  • 8 1/2 oz. package corn bread mix
  • 12 oz. can Spam luncheon meat, cubed
  • 10 oz. package broccoli spears, thawed and drained
  • 1 1/2 cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F.
  2. Prepare cornbread according to package directions.
  3. Stir in cubed Spam into the cornbread batter.
  4. Spread the mixture into a greased 9-inch pie plate.
  5. Bake for 15 to 20 minutes or until the cornbread is almost done.
  6. Arrange broccoli spears on top of the partially baked cornbread.
  7. Sprinkle shredded Cheddar cheese over the broccoli.
  8. Return to the oven and bake for an additional 5 to 10 minutes or until the cheese is melted and the cornbread is fully baked.
