Corn Chowder From Mimi'S Cafe
Ingredients
- 4 tablespoons butter ⓘ
- 6 tablespoons onions, chopped ⓘ
- 3/4 cup celery, large dice ⓘ
- 2 1/2 cups hot water ⓘ
- 2 cups potatoes, peeled and cut into 1/2-inch cubes ⓘ
- 1 quart half-and-half cream ⓘ
- 3 cups frozen corn, thawed ⓘ
- 2 tablespoons sugar ⓘ
- 2 teaspoons salt ⓘ
- 1 pinch white pepper ⓘ
- 3 tablespoons flour ⓘ
Instructions
- On medium heat, melt butter.
- Simmer onion and celery for 5 minutes until soft but not brown.
- Add water, potatoes, corn and seasonings.
- Cover and simmer for 30 minutes or until potatoes are barely tender.
- Whisk the flour into 1 cup of half & half and stir into soup.
- Add remaining 3 cups half & half.
- Simmer for about 15 minutes until soup thickens to creamy consistency.
- To make soup thicker, simmer another 5-10 minutes.
