Corn Meal Griddle Cakes

Ingredients

  • 1 beaten egg
  • 1 1/2 c. milk
  • 2 Tbsp. melted shortening
  • 3/4 c. flour
  • 1/2 tsp. salt
  • 3 tsp. baking powder
  • 3/4 c. meal

Instructions

  1. Combine egg, milk and shortening; add flour mixed with salt and baking powder.
  2. Then mix with corn meal.
  3. Beat smooth and bake on ungreased griddle.
  4. Makes 6 cakes.
