Ingredients

  • 2 c. scalded milk
  • 1/2 c. butter
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1/2 c. corn meal
  • 2 pkg. yeast
  • 1/2 c. warm water
  • 3 eggs

Instructions

  1. Scald the milk.
  2. Add butter, sugar, and salt to the milk.
  3. Bring the mixture to a boil and slowly add the corn meal.
  4. Stir until thickened, then set aside to cool until lukewarm.
  5. Dissolve the yeast in warm water.
  6. Stir the yeast into the cooled mush and add the eggs.
  7. Add flour gradually to form a soft dough.
  8. Let the dough rise until it has doubled in size.
  9. Punch down the dough.
  10. Let it rise again until doubled.
  11. Shape into rolls or roll out and cut with a glass.
  12. Place the rolls on a baking sheet, butter the tops, and sprinkle with corn meal.
  13. Bake at 350°F for 15 minutes.
