Ingredients

  • 2 c. corn
  • 3 eggs
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 c. flour

Instructions

  1. Stir the corn into the well beaten egg yolks.
  2. Add the salt, pepper, and flour to the mixture.
  3. Beat the egg whites until they stand up in peaks.
  4. Gently fold the beaten egg whites into the corn mixture.
  5. Drop tablespoonfuls of the batter into a greased fry pan on medium heat.
  6. Brown quickly on both sides.
  7. Cook until the patties are golden brown.
