Ingredients

  • 1 lb creamed corn
  • 1 egg
  • 1 Tbsp sugar
  • 3/4 to 1 cup flour
  • 1 tsp vanilla
  • 1 tsp baking powder
  • Powdered sugar

Instructions

  1. Mix together creamed corn, egg, sugar, vanilla, and baking powder in a bowl.
  2. Gradually add flour until the batter reaches a thick, dropable consistency.
  3. Heat oil in a deep fryer or deep skillet until hot.
  4. Drop teaspoonfuls of batter into the hot oil carefully.
  5. Fry until golden brown on all sides.
  6. Remove from oil and drain on paper towels.
  7. Roll the fried popovers in powdered sugar before serving.
