Ingredients

  • 3 cups flour
  • 3/4 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup orange juice
  • 1/2 cup butter, melted
  • 2 eggs
  • 1 1/4 cups coarsely chopped cranberries
  • 1/2 cup chopped nuts

Instructions

  1. Preheat oven to 350°F (175°C). Grease a large loaf pan.
  2. Mix all dry ingredients together in a bowl.
  3. Combine orange juice, melted butter, and well-beaten eggs in a separate bowl.
  4. Add the wet mixture to the dry ingredients and stir just until moistened.
  5. Stir in coarsely chopped cranberries and chopped nuts.
  6. Pour the batter into the greased loaf pan.
  7. Bake for 65 minutes or until a wooden pick inserted in the center comes out clean.
  8. Cool for 5 minutes, then remove from the pan and cool on a wire rack.
