Ingredients

  • 9 lb. corn (whole kernel), frozen
  • 24 egg yolks, beaten
  • 3 qt. milk
  • 6 oz. margarine, melted
  • 2 Tbsp. salt
  • 1 tsp. white pepper
  • 24 egg whites

Instructions

  1. Thaw the frozen corn.
  2. Combine the thawed corn with beaten egg yolks, milk, melted margarine, salt, and white pepper.
  3. Beat egg whites until stiff but not dry.
  4. Gently fold the beaten egg whites into the corn mixture.
  5. Pour the mixture into two 12 x 20 x 2-inch baking pans.
  6. Place the pans in larger pans filled with hot water to create a water bath.
  7. Bake at 325°F (163°C) for 40 to 45 minutes until set and golden.
