Ingredients

  • 2 (12 oz.) cans corn Niblets
  • 1 Tbsp. flour
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • freshly ground pepper
  • 3 Tbsp. oil
  • 1 cup skim milk
  • 2 egg whites

Instructions

  1. Preheat oven to 350°F (175°C). Drain the corn and place it in a medium-sized bowl.
  2. Add flour, sugar, salt, pepper, oil, and skim milk to the corn and mix well.
  3. Fold in the stiffly beaten egg whites, blending thoroughly.
  4. Pour the mixture into a 2-quart casserole dish.
  5. Bake for an hour or until the pudding is set and slightly browned on top.
