Ingredients

  • 3 cups cornmeal
  • 1/2 cup flour
  • 1/8 teaspoon baking powder
  • 2 tablespoons mayonnaise
  • 1 egg
  • 2 1/2 cups milk
  • 3 slices bacon

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Mix cornmeal, flour, baking powder, mayonnaise, egg, and milk in order until combined.
  3. Set the batter aside.
  4. Fry bacon slices in a skillet over medium heat until cooked on both sides, not crispy or raw.

  6. Let the mixture stand on the stovetop until the bottom settles.
  7. Transfer the skillet to the oven and bake until the top is golden brown.
