Ingredients

  • 5 medium potatoes, thinly sliced
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 4 c. shredded cabbage
  • 1 can corned beef
  • 1 can cream of celery soup
  • 1 1/2 c. milk

Instructions

  1. Place sliced potatoes in a shallow 9 x 13-inch baking dish.
  2. Cover the potatoes with chopped onion, salt, and pepper.
  3. Add shredded cabbage on top of the onion layer.
  4. Crumble the can of corned beef over the cabbage.
  5. Mix the cream of celery soup with milk and pour over the casserole.
  6. Cover the dish and bake at 375°F for 1.5 hours.
