Ingredients

  • 4 medium potatoes (1 1/4 lb.), peeled and cut into 1/2-inch cubes
  • 2 Tbsp. vegetable oil
  • 1 large onion, coarsely shredded (5 cups)
  • 1 (12 oz.) can corned beef, crumbled
  • 1/2 tsp. caraway seed
  • 1/2 tsp. pepper
  • 1/4 tsp. salt

Instructions

  1. Saute the potatoes in vegetable oil in a large, nonstick skillet over medium heat, stirring often, until tender and lightly browned, about 10 minutes.
  2. Add the onions and sauté for 1 minute longer.
  3. Add cabbage, crumbled corned beef, caraway seed, pepper, and salt.
  4. Mix well and serve.
