Ingredients

  • 3/4 lb. lean ground beef
  • 16 oz. can stewed tomatoes
  • 1 c. beef broth
  • 4 oz. can mushrooms
  • 1 medium onion, chopped
  • 1 green pepper, chopped
  • 1 1/2 tsp. Dijon mustard
  • dash of Worcestershire sauce
  • salt and pepper to taste
  • 3/4 c. Minute rice
  • 1/2 c. sour cream

Instructions

  1. Brown the ground beef until crumbly; drain excess fat.
  2. Add stewed tomatoes, beef broth, mushrooms, chopped onion, chopped green pepper, Dijon mustard, Worcestershire sauce, salt, and pepper to the beef.
  3. Stir the mixture well.
  4. Bring to a simmer and cook until the rice is tender, about 20 minutes.
  5. Serve in bowls topped with sour cream.
