Ingredients

  • 1 1/2 oz. yellow cornmeal
  • 1/4 tsp. ground pepper
  • 1/2 tsp. onion powder
  • 2 Tbsp. evaporated skim milk
  • 4 (5 oz.) catfish fillets
  • 2 tsp. olive oil
  • Creole sauce

Instructions

  1. Preheat oven to 425°F.
  2. Spray a baking sheet with nonstick cooking spray.
  3. On wax paper, mix yellow cornmeal, ground pepper, and onion powder.
  4. Pour evaporated skim milk into a shallow bowl.
  5. Dip each catfish fillet into the milk, then into the cornmeal mixture, ensuring both sides are lightly coated and using all the milk and cornmeal.
  6. Place the coated fillets on the prepared baking sheet.
  7. Drizzle each fillet with 1/2 teaspoon olive oil.
  8. Bake for 10 minutes, or until the fish is cooked through.
  9. Place the baking sheet under the broiler for 1 minute to brown slightly.
  10. Serve the fillets with Creole sauce.
