Ingredients

  • 1/3 cup slivered almonds
  • 1 1/4 cups cornmeal
  • 1/3 cup coconut
  • 1/2 cup chopped dates
  • 1/3 cup raisins
  • 3/4 teaspoon vanilla
  • 3/4 teaspoon salt
  • 1/3 cup honey
  • 1/4 teaspoon coriander

Instructions

  1. Toast slivered almonds in the oven until light brown.
  2. Bring 1 quart of water to a boil.
  3. Mix 1 1/4 cups cold water with 1 1/4 cups cornmeal.
  4. Slowly add the cornmeal mixture to the boiling water, stirring constantly.
  5. Cook and stir for 15 minutes until thickened.
  6. Add the toasted almonds, coconut, chopped dates, raisins, vanilla, salt, honey, and coriander.
  7. Simmer the mixture for an additional 15 minutes before serving.
