Ingredients

  • 1 c. flour
  • 1/2 c. cornmeal
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 3/4 c. buttermilk

Instructions

  1. In a mixing bowl, stir together flour, cornmeal, baking powder, and baking soda.
  2. Add buttermilk to the dry ingredients.
  3. Stir until the batter is blended and smooth.
  4. Pour about 1/4 cup of batter onto a hot, greased skillet or griddle for each pancake, spreading to a 4-inch circle.
  5. Cook until golden brown on both sides.
  6. Serve with applesauce or maple syrup.
