Ingredients

  • 1 1/4 cup whole cornmeal
  • 2 cup hot milk
  • 1 teaspoon cold pressed oil
  • 1/2 teaspoon sea salt
  • 3 eggs

Instructions

  1. Preheat oven to 425°F.
  2. Scald cornmeal with hot milk and add cold pressed oil and sea salt.
  3. Cool the mixture to lukewarm temperature.
  4. Add the beaten eggs and stir well.
  5. Heat oiled muffin tins in the oven until very hot.
  6. Quickly fill each cup two-thirds full with batter.
  7. Bake immediately for 25 to 30 minutes.
  8. Serve at once.
