Ingredients

  • 1 pkg. (1 Tbsp.) dry yeast
  • 1 tsp. sugar
  • 1/4 cup warm water
  • 1/2 cup cornmeal
  • 1/3 cup sugar
  • 1/3 cup shortening
  • 2 tsp. salt
  • 1 3/4 cups milk
  • 3/4 cup cream-style corn
  • 2 lightly beaten eggs

Instructions

  1. Dissolve yeast, sugar, and warm water in a small bowl and set aside until frothy.
  2. In a heavy saucepan, combine cornmeal, sugar, shortening, salt, and milk.
  3. Cook over medium heat until thickened, stirring often.
  4. Remove from heat and cool until lukewarm.
  5. In a large bowl, combine corn and eggs.
  6. Stir in the yeast mixture and cooled cornmeal mixture.
  7. Mix thoroughly, then stir in 5 cups of flour.
