Ingredients

  • 1 2/3 cups water
  • 2/3 cup milk
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 2 1/2 tablespoons instant minced onion
  • 2 2/3 cups instant mashed potatoes
  • 2 cups cottage cheese

Instructions

  1. Heat water, milk, butter, and salt until boiling; remove from heat.
  2. Add minced onion and instant mashed potatoes to the mixture.
  3. Whip with a fork until well combined.
  4. Fold in cottage cheese.
  5. Transfer the mixture to a 2-quart casserole dish.
  6. Dot the top with butter and sprinkle with paprika.
  7. Bake at 350°F for 30 to 40 minutes.
