Ingredients

  • 1/4 cup oleo
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup cottage cheese
  • 1/2 cup crushed pineapple, drained
  • 2 cups unbleached flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons dried dill
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C). Grease and flour an 8-inch round pan.
  2. In a large bowl, cream together the oleo and sugar until fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in cottage cheese and drained crushed pineapple until well combined.
  5. In a separate bowl, combine the flour, baking powder, baking soda, salt, and dried dill.
  6. Alternately add the dry ingredients and milk to the creamed mixture, beginning and ending with the dry ingredients, mixing after each addition.
  7. Spoon the batter into the prepared pan and smooth the top.
  8. Bake at 375°F for 10 minutes, then reduce the temperature to 350°F and bake for an additional 50 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool for 10 minutes before removing from the pan and transferring to a rack to cool completely.
