Ingredients

  • 2 packages yeast
  • 1/2 cup water
  • 1 teaspoon sugar
  • 2 cups cottage cheese
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 2 eggs

Instructions

  1. Dissolve yeast and 1 teaspoon sugar in water.
  2. Heat cottage cheese, 1/4 cup sugar, and salt until warm, not hot.
  3. Combine flour and baking soda in a large bowl.
  4. Add the heated cottage cheese mixture and eggs to the flour mixture.
  5. Knead until thoroughly mixed.
  6. Let the dough rise until doubled in size.
  7. Punch down the dough. Shape into 2-inch balls and place 1 inch apart in a greased pan.
  8. Let rise for 30 minutes.
  9. Bake at 350°F (175°C) for 20 to 25 minutes until golden brown.
