Ingredients

  • 12 new or red potatoes
  • 3 c. grated sharp Cheddar cheese
  • 8 strips cooked bacon, crumbled
  • 1/2 c. butter, melted
  • salt and pepper to taste

Instructions

  1. Boil potatoes with skins on until done.
  2. Drain and let cool. Slice unpeeled potatoes thin.
  3. Butter the bottom of a 13 x 9-inch pan.
  4. Layer half of the sliced potatoes in the pan, then add salt and pepper.
  5. Sprinkle half of the grated Cheddar cheese and half of the crumbled bacon over the layer.
  6. Drizzle half of the melted butter over the layer.
  7. Repeat the layers with the remaining potatoes, salt, pepper, cheese, bacon, and butter.
  8. Bake at 350°F until bubbling, about 15 minutes.
