- Parboil the potatoes, then cool and grate them into a large casserole dish.
- Save 2 to 3 tablespoons of melted oleo for topping.
- In a bowl, mix the sour cream, cream of chicken soup, chopped green onions, and the remaining melted oleo.
- Add the mixture to the grated potatoes and stir to combine.
- Sprinkle the shredded cheese over the top of the mixture.
- Add the reserved oleo to the top of the casserole along with the cheese.
- Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
