Ingredients

  • 6 large potatoes
  • 1 1/4 cup melted oleo
  • 1/3 cup chopped green onions
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cup shredded American or mild Cheddar cheese

Instructions

  1. Parboil the potatoes, then cool and grate them into a large casserole dish.
  2. Save 2 to 3 tablespoons of melted oleo for topping.
  3. In a bowl, mix the sour cream, cream of chicken soup, chopped green onions, and the remaining melted oleo.
  4. Add the mixture to the grated potatoes and stir to combine.
  5. Sprinkle the shredded cheese over the top of the mixture.
  6. Add the reserved oleo to the top of the casserole along with the cheese.
  7. Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
