Ingredients

  • 2 pork chops
  • 1/4 c. pan drippings from pork chops
  • 2 c. cooked rice
  • 1 medium cucumber, diced
  • 1 medium ripe tomato, diced
  • 1 medium onion, diced or use 2 green onions

Instructions

  1. Fry pork chops and cut into cubes.
  2. Reserve 1/4 cup pan drippings.
  3. Stir pork chops, pan drippings, cucumber, tomato, onion and banana pepper into cooked rice.
  4. Mix well.
  5. Serves 4.
