Ingredients

  • 1 lb. Maryland backfin crabmeat
  • 1/2 cup butter or margarine
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion juice
  • 1/4 teaspoon liquid hot pepper sauce
  • 1/4 teaspoon thyme
  • 4 thin slices Smithfield ham

Instructions

  1. Remove cartilage from crabmeat.
  2. Melt butter in skillet.
  3. Add crabmeat, lemon juice, salt, pepper, onion juice, hot pepper sauce, and thyme to the skillet.
  4. Saute briefly until crabmeat is just heated through.
  5. Cover and simmer for 2 to 3 minutes until edges of ham curl and flavors are well-blended.
  6. Serve on toast if desired.
