Ingredients

  • 1 cup cracked wheat
  • 1 cup cold water
  • 1 cup milk
  • 2 tablespoons shortening
  • 1 tablespoon salt
  • 1/4 cup molasses
  • 1 1/2 packages yeast
  • 1/2 cup warm water
  • 6 to 7 cups flour

Instructions

  1. Soak cracked wheat in cold water overnight.
  2. Mix together the milk, shortening, salt, and molasses.
  3. Add soaked cracked wheat to the mixture.
  4. Dissolve yeast in warm water and add to other ingredients.
  5. Add half the flour and beat for 2 minutes.
  6. Add remaining flour to make a stiff dough.
  7. Knead the dough for 10 minutes.
  8. Grease the dough, cover, and let rise until doubled in size.
  9. Divide the dough into 2 loaves.
  10. Let the loaves rise again.
  11. Bake at 375°F for 10 minutes, then at 350°F for 30 to 35 minutes.
