Cracked Wheat Salad *
A vibrant cracked wheat salad bursting with citrus, nuts, and herbs, perfect as a fresh side dish for gatherings or light meals with bold flavors.

Instructions
- In a large saucepan, combine water and bulgur.
- Bring to a boil; reduce heat and simmer, covered, for 20 minutes or until water is absorbed and wheat is tender, but not mushy.
- Transfer to a bowl and refrigerate, uncovered, until cool.
- Add chopped pecans, dried currants, chopped parsley, olive oil, grated orange zest, mandarin oranges or orange pieces, salt, pepper, and orange juice.
- Mix well and serve.
