  • 2 c. bulgur
  • 1 c. chopped pecans
  • 1 c. dried currants
  • 4 Tbsp. chopped parsley

  • grated zest of 1 orange
  • 1 can mandarin oranges or 1 orange, cut up
  • salt and pepper to taste
  • orange juice to taste

Instructions

  1. In a large saucepan, combine water and bulgur.
  2. Bring to a boil; reduce heat and simmer, covered, for 20 minutes or until water is absorbed and wheat is tender, but not mushy.
  3. Transfer to a bowl and refrigerate, uncovered, until cool.
  4. Add chopped pecans, dried currants, chopped parsley, olive oil, grated orange zest, mandarin oranges or orange pieces, salt, pepper, and orange juice.
  5. Mix well and serve.
